Imagine your fave fall coffee drink transformed into a delcious cheesecake treat. Nicolette from @basilandbiceps completely outdid herself! She used our cookies for the base, and then layered on coffee cheesecake and pumkin cheesecake. These Pumpkin Spice Latte Cheesecakes are unreal - you need to try!


Pumpkin Spice Latte Cheesecakes

Ingredients:

  • Coffee Cheesecake
  • 3/4 cup cashews 
  • 3 tbsp strongbrewed coffee 
  • 3 tbsp maple syrup 
  • 3 tbsp melted coconut oil 
  • 1 tsp vanilla 
  • Pinch of salt 
  • 1 tbsp ground coffee
  • Pumpkin Spice Cheesecake
  • 3/4 cup cashews 
  • 3 tbsp canned pumpkin  
  • 3 tbsp maple syrup 
  • 3 tbsp melted coconut oil 
  • 1 tsp vanilla 
  • Pinch of salt 
  • 2 tsp pumpkin spice 
  • 4 - 2 oz or 8 - 1 oz Love + Chew Pumpkin Chip Cookies OR Mocha Chip Cookies

    Directions:

    1. Break down cookies and press into a parchment lined pan.

    2. In a blender, first add in coffee ingredients and blend until completely smooth.

    3. Pour over cookie base and place in freezer to set for 1-2 hours. Once coffee layer is set, move onto pumpkin.

    4. Add pumpkin ingredients to blender and blend again until smooth.

    5. Pour over coffee layer and sprinkle on a lil extra coffee grounds. Let freeze overnight to set.

    6. Remove cheesecake from pan and cut into squares. ENJOY!
