PB Mocha Superfood Bites
Nicolette @basilandbiceps created this snack with simplicity in mind! Check out her recipe for these easy superfood bites using our Mocha Chip Superfood Cookies as a base. You sprinkle some on some espresso powder like Nicolette or use your favorite toppings! Check out her recipe below:

PREP TIME - 10 minutes
TOTAL TIME - 1 hour 10 minutes
2 servings
Ingredients
- 2 Mocha Chip Superfood Cookies
- 1 big spoonful of PB
- 1/2 cup vegan white chocolate
- Espresso powder for topping
Instructions
1. Break down the cookies in a bowl and combine with peanut butter
2. Roll into individual balls and set on a sheet pan lined with parchment paper. Freeze for at least 30 min.
3. Melt vegan white chocolate in a bowl and remove dough from freezer. Dip each in the white chocolate and coat evenly.
4. Top with some espresso/coffee powder and place back in freezer for an hour.
5. Enjoy!
