My Favorite At-home Lunch Recipes

It’s beginning to look like the #WFHlife is here to stay. I’ve compiled my favorite at-home lunch recipes to get your creative juices flowing. Many of these recipes can be made with canned or frozen ingredients so they’re a win-win! Also it's a great opportunity to show your family or roommates how easy eating plant foods can be. Vegan Green Chili Mac N Cheese by the Minimalist Baker. Comfort food at its finest made with delicious vegan cheese.

Vegan Caesar Salad by Oh She Glows. Switch up your boring salad routine with this vegan caesar salad. I recommend making the salad dressing, roasting the chickpeas and making the vegan cheese the night before, so during the work day all you have to do is assemble!

Curried Vegetable and Chickpea Stew (Slow Cooker) By the Kitchn. I love slow cookers because they do all the hard work for me. Just chop up all the ingredients and throw it in. You can sub frozen veggies as well.

Quinoa Chili by Damn Delicious. I usually hold the sour cream or you can sub vegan sour cream. This is another great meal that freezes well and is sure to be a crowd pleaser. I usually make this one in big batches as well.

Chickpea Salad Recipe with Carrots & Dill by Cookie + Kate. This salad lasts in the fridge for a couple of days and tastes clean and fresh.

Orange Sesame 3 Bean Salad by Another Music in a Different Kitchen. This recipe is super simple but also fresh and satisfying. You can make the salad dressing the night before as well.

Vegan Quesadillas with Chickpeas by Beauty Bites. I practically grew up on quesadillas in San Diego so it was hard finding a decent plant-based recipe with vegan cheese. Serve with hot sauce, salsa and guacamole.
