Brown Rice Grape Leaf Salad

If you love stuffed grape leaves, this recipe is for you. This Mediterranean salad features the best flavors and textures of a dolma - a Mediterranean stuffed grape leaf mezze. The key ingredient is obviously the grape leaves.

Brown Rice Grape Leaf Salad

Ingredients:

  • 1 cup brown rice
  • 1/2 teaspoon kosher salt
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1/2 cup currants
  • 1/2 cup toasted pine nuts
  • 1/3 cup finely chopped grape leaves
  • 1/4 cup thinly sliced green onions
  • 2 tablespoons minced fresh cilantro
  • 2 tablespoons fresh dill
  • 2 tablespoons fresh mint
  • 6 cups mixed greens

      Directions:

      1. Cook rice according to the instructions. Brown rice usually takes 40 minutes. Once the rice is tender and the water absorbed, remove from the heat and mix with 1 tablespoon olive oil and 1 tablespoon lemon juice. Let cool.

      2. Stir in currants, pine nuts, grape leaves, green onions, cilantro, dill, and mint. 

      3. In a separate bowl, toss greens with 2 tablespoons olive oil, 1 tablespoon lemon juice and salt. 

      4. Serve the salad and top it with the rice. Enjoy!
