Ingredients:
- 1 cup brown rice
- 1/2 teaspoon kosher salt
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1/2 cup currants
- 1/2 cup toasted pine nuts
- 1/3 cup finely chopped grape leaves
- 1/4 cup thinly sliced green onions
- 2 tablespoons minced fresh cilantro
- 2 tablespoons fresh dill
- 2 tablespoons fresh mint
- 6 cups mixed greens
Directions:
1. Cook rice according to the instructions. Brown rice usually takes 40 minutes. Once the rice is tender and the water absorbed, remove from the heat and mix with 1 tablespoon olive oil and 1 tablespoon lemon juice. Let cool.
2. Stir in currants, pine nuts, grape leaves, green onions, cilantro, dill, and mint.
3. In a separate bowl, toss greens with 2 tablespoons olive oil, 1 tablespoon lemon juice and salt.
4. Serve the salad and top it with the rice. Enjoy!
