Banana Bread Nice Cream Cups

This yummy no-bake recipe, courtesy of Lia Reid, uses minimal ingredients including our Banana Bread Cookies on top! You can create this with those ripe bananas that have been waiting to be used. This creation is for all skill levels and is great for the days you want to avoid turning on your oven! With a bit of patience while your treats or in the freezer, you’ll whip this out in no time!

This recipe allows for a bunch of flavor combinations and possibilities. You can add protein powders, use vanilla extract, or other flavors and additions to the nice cream to compliment your palette or fulfill daily nutritional needs! The first step is cutting up and freezing your bananas beforehand.

Prep Time - 30 minutes
Total Time - 1 hour

For the Nice Cream

  • 2-3 overripe bananas
  • Choice of milk for texture


    • 1 scoop of protein powder
    • ½ tsp Vanilla extract
    • Chocolate syrup
    • Peanut butter

    For the Base

    • Vanilla Granola Butter, or your choice of nut butter!


    Other topping options:

    • Chocolate chips
    • Chopped nuts


    1. Break out a blender or food processor and place your frozen bananas inside. Add a splash of your milk of choice to help smooth it out. The end result should have a texture and thickness which resembles ice cream. If it is too thick, add more milk. Add in your flavoring/protein powder and blend again. Throw this into the freezer for a couple of minutes after blending well.

    2. Line your cupcake tins (we suggest using silicone liners for easy removal) and place a spoonful of your granola or nut butter on the bottom. Spread it out so it is covering the entire bottom. Pop them in the freezer for about 30 minutes.

    3. Grab your nice cream and cupcake tin out of the freezer. Fill the tins with the nice cream and top with some crumbled Love + Chew Banana Bread Cookies, or any other toppings you like. Put the tin back in the freezer until they are frozen solid.
